Summer Salad

A festive summer salad with garbanzo beans, avocado, cucumber, cherry tomatos, feta cheese and herbs. Toss together with a Greek style dressing.

Ingredients for the salad:

  • 2 cups canned organic garbanzo beans or chickpeas, drained and rinsed

  • 1 organic avocado, peeled and diced

  • 1 cup organic cherry tomatoes, halved

  • 1 cup organic cucumbers, quartered

  • 1/4 cup organic red onion, finely diced

  • 1/2 cup crumbled feta or goat cheese

  • 1/4 cup chives, thinly sliced

For the dressing:

  • 1/4 cup good, organic olive oil

  • 1 teaspoon Dijon mustard

  • 2 tablespoons red wine vinegar

  • 1 tablespoon lemon juice

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • Sea salt and pepper to taste

Instructions

Place the garbanzo beans, avocado, tomatoes, cucumbers, red onion, cheese and chives in a large bowl.

Combine all of the dressing ingredients in a glass mason jar and shake vigorously to combine. Dressing may be stored in the refrigerator for up to one week.

Pour the dressing over the salad and toss gently to coat.

Garnish with additional feta and chives if desired, then serve.
