2/3 cup good-quality organic tahini

4 garlic cloves, peeled and smashed

2 lemons, juiced

4-8 tablespoons cold water

4 tablespoons extra virgin organic olive oil

1 ½ teaspoon fine sea salt

1 teaspoon ground cumin

2 (15 ounce) can organic chickpeas, rinsed and drained


Add all ingredients except chickpeas to a food processor. Puree until smooth.

Add chickpeas. Puree mixture for 3-4 minutes, pausing to scrape down sides occasionally.

Taste and season with more salt, lemon or cumin.

Garnish with swirl of olive oil, toasted pine nuts or Za’atar and serve. Make keep in refrigerator, covered for 3-5 days.

Yield: 12-16 servings
